  1. Spaghetti & Meatsauce OR Lasagna

    Tossed Green Salad

    Garlic Bread

Breaded Chicken Tenders (w/ dipping sauces)

    Baked Potatoes

    Tossed Green Salad

BBQ Pulled Pork on HB Buns

    Potato Salad

    Cole Slaw

  2. You could do Lasagna but that can be expensive....how about spaghetti.

  3. spagetti & chicken parm

spagetti all u gotta do is boil it in the water

then add the sauce from the jar later on

& chicken, just fry up some cutlets & add cheese & sauce while in a pan

then pop in the oven for 10 - 15 mins

  4. pasta salad and finger sanwiches

  5. green enchilada casserole, chips and pico de gallo or salsa

  6. Super easy, get one whole roasted chicken from the supermarket, or Boston Market, or grill place if you have one nearby, get 2 packages of romaine hearts (there are usually 3 in each package), a bottle of ceasar dressing (or make your own), and some day old bread.

Cut the chicken meat from the bone and put it into a mixing bowl, toss with a tablespoon of lemon juice and a tablespoon of good olive oil, add salt and pepper if the chicken is not seasoned. Set aside.

For croutons, tear up the bread into bite sized pieces (tearing is better than cutting because you'll get better texture).  In another mixing bowl toss the pieces of bread with a drizzle of olive oil, about a teaspoon of dried herbs (oregano and basil are fine) and a bit of salt and pepper.

Spread the croutons on a baking tray or cookie sheet and toast in the oven at 350 degrees until golden brown, set aside. If you want to use spray oil like Pam, spread the bread on the tray first, give it a light spray and sprinkle on the seasonings afterward and then toast.

Tear up the lettuce, toss with caesar dressing and a few tablespoons of grated or shredded parmesan, then toss in the croutons.

Plate the salad on 12 plates and just before serving, pop the chicken into the microwave for about 45 seconds to 1 minute just to warm it up and put a few pieces of chicken (2 to 3 ounces per salad) on each salad and top with a little more shredded cheese. For a lunch 1 chicken should give you plenty of meat for each person.

Serve with lots of crusty bread and olive oil for dipping.

Then dessert...and this is one of my favourites...fruit and honeyed yogurt.

Get 16 ounces of greek yogurt or strain 16 ounces of standard american yogurt through a cheesecloth lined strainer over a bowl for 4 hours or so in the fridge.

Turn the yogurt out into a bowl and add 2 teaspoons of vanilla extract (add the pulp from one vanilla bean if you can afford it),  then add about 6 tablespoons of honey and the zest of one orange.  Mix this well and put in the fridge. Reserve the orange, you'll need it.

Next cut up any kind of fruit you like (I prefer berries and peaches, nectarines and apricots), squeeze over the juice of the orange you zested and place in the fridge to chill.

When you're ready, make parfaits with the yogurt and fruit and top with crisp crushed cookies like amaretti or thin sugar cookies and serve.

Not only is the whole thing delicious, but it's elegant and healthy too.
