You might also try the Slow Club  at 130 rue de Rivoli, 1er (Métro: Châtelet or Louvre-Rivoli)  which has been around forever.

My personal favorite hangout is Aux Trois Mailletz at 56 rue Galand in the 5th. Its where I sing when I'm in Paris.
