  1. These are a few of my favorites

    AUSTRALIAN SHRIMP ON THE BARBIE

    1/2 c  (1 stick) butter,melted

         1/4 c  Olive oil

         1/4 c  Minced fresh herbs

                -(parsley,thyme and

                -cilantro)

           3 tb Fresh lemon juice

           3 lg Garlic cloves,crushed

           1 tb Minced shallot

                Salt and pepper,freshly

                -ground

           1    1/2 lb medium large

                -shrimp,unpeeled

      

       Spinach leaves Lemon slices

      

       Combine first 8 ingredients in large bowl.  Mix in

       shrimp.  Marinate at room temperature 1 hour or in the

       refrigerator 5 hours,stirring occasionally.  Prepare

       barbecue with medium hot coals.  Thread shrimp on narrow

       skewers.  Grill until just opaque,about 2 minutes per

       side.Line platter with spinach.  Arrange skewers on

       platter.  Garnish with lemon and serve. Makes 8 servings.

              



                              AUSTRALIAN GRILLED FISH

       Amount  Measure       Ingredient -- Preparation Method

        4                    Fish steaks

          1/4   c            Lime juice

        2       tb           Vegetable oil

        1       t            Dijon mustard

        2       ts           Fresh ginger root -- grated

          1/4   ts           Cayenne pepper

                             Black pepper



       * For the steaks: they should be 8-10 ounces and

       1-inch thick each. Use Swordfish, Halibut or Salmon

       steaks.

      

       1. In a bowl, combine the lime juice, 1 tablespoon

       oil, ginger, cayenne pepper and enough freshly ground

       black pepper to suit your taste. 2. Marinate the fish

       in the marinade for 45-60 minutes. Turn steaks 2-3

       times. 3. Have the grill prepared with white coals and

       brush the cooking grill with the remaining one

       tablespoon oil. 4. Grill the fish, brushing several

       times with the marinade, until cooked through and

       opaque in the center. Turn fish after about 4-5

       minutes. Total grilling time will dependon your grill

       and the heat of the coals.

      

       * To broil instead, use a broiler pan brushed with oil

       and broil until center is opaque. Will take about 10

       minutes total in broiler. Turn steaks after 5 minutes,

       and baste often with marinade.

      These 2 are great to fix together and wonderful with a baked potatoe and a green veggie of your choice

  4. small pies and pasties with tomato sauce, prawns with lemon squeeze, cubes of fritz and cheese and gherkins skewered on tooth picks and pressed into 1/2 an orange, savoury biscuits with Vegemite and slices of cheese arrange on a bed of lettuce with spring onions and radishes. some ideas also beer to wash it down....

  5. Plain soft  sponge cake .. Melted chocolate. desiccated coconut.

    Cut the cake in cubes, as big as you want it. Coat all sides in melted choc.. and then cover with the coconut..

    Simple but yummy..

    Australia is a multicultural country. So we pretty much have everything.
