Craving onion rings, easy recipe that I can use one onion in?

So, I'm really craving onion rings. DOn't ask. So I want ot make some, now, I don't have anything special, I have flour, baking powder and soda, and things of that general baking manner, oil, and one onion, not a lot, I know, but I'm craving. Easy recipe. I'm really not into frying, so if there is one that is baked, that'd be great. And I don't have bread right now. -tear- lol, but yeah. So post away. (:

  1. These are incredible! There is no way that you feel like you are eating healthy and low fat when you eat these.

    45 min | 25 min prep

    SERVES 2

    1 peeled onion

    1/3 cup all-purpose flour

    1 egg white

    1/2 cup nonfat breadcrumbs or lowfat breadcrumbs

    1 teaspoon italian seasoning, optional

    3/4 teaspoon garlic powder, optional

    3/4 teaspoon onion powder, optional

    1/4  teaspoon salt

    Preheat the oven to 400 degrees.

    Spray a baking sheet with nonstick spray.

    Slice the onion width wise and then break them apart into rings.

    Put the flour in 1 bowl, the egg white into a second, and into the third put the bread crumbs and all the spices (all the rest of the ingredients).

    Dip each onion ring into the flour, then the egg white, and then the bread crumbs.

    Place them on the baking sheet and then repeat with the next ring.

    Bake them all for about 20 minutes or until crispy.

    P.S. If you do not have any bread crumbs, just make them without.  Enjoy!

    DIRECTIONS

    Heat the oil in a large, deep skillet over medium high heat.

    Prepare pancake mix according to package directions.

    One at a time, dip Spanish onion rings into the prepared pancake batter, then into the hot oil. Fry until crispy and browned, about 3 minutes. Drain on paper towels
