  1. Sounds like a training issue, not a problem with the bit.  Try queing  a slow down by pulling back and releasing, sitting deep in the saddle. That probably won't work at first, so follow it with a one rein stop and a few circles. In time he'll realize every time  he doesn't listen he has to do more work and will slow down for the half halt que.

  2. my friend has the same problem and uses a kimberwick for jumping. it works great for her and she normally uses a snaffle too.

  3. A French link's a nice bit, but even the best trained horses can get a little strong in cross country!  They get excited, and they want to run.

The next step up is probably a Dr. Bristol.  Looks the same, but the little link in the center is tilted to get the attention a bit more.  I'd recommend a full cheek, with keepers, to add a little leverage in the poll and more lateral control as well.  My event horse gets a slow twist, too; he's well trained but he's a puller - just loves cross country.

Remember to ask, not tell, and use your seat and body position as well.  You don't want to circle, but you can make serpentines and get his attention off the next jump and hopefully onto you.

I wouldn't go stronger than this yet; don't want to punish all that enthusiasm with a harsher bit.  Give this one a try.
