Cuban Sweet Potato Candy?

I used to buy this in a Hialeah ,Fl. Cuban bakery back in the 70's. It sort of had the consistincy of a chewy fudge, but was coated with a hard sugar on the outside. I never knew the name of it just pointed to it at the counter. I have never seen a recipe or could find the correct name or it.

  1. Surprise Sweet Potato Candy

    2 cups sugar

    1/2 cup margarine

    1 cup evaporated milk

    1/2 cup raw grated sweet potatoes

    2 cups small marshmallows

    1 cup graham cracker crumbs

    2 teaspoons vanilla

    2 cups chopped pecans

    In a large saucepan combine sugar, margarine, and milk and cook

    over medium heat, stirring frequently, until mixture boils. Add

    sweet potatoes. While stirring, continue to boil until mixture

    reaches soft-ball stage (235 degrees on a candy thermometer).

    Remove from heat and add marshmallows and graham cracker crumbs.

    Stir until marshmallows are melted and well blended. Add vanilla

    and pecans, mixing well. Pour into a buttered 9-inch square baking

    dish. Cool completely before cutting into squares.


  2. i don't know what it's called, and my cuban husband is at work, so i can't ask, but he buys this all the time, and loves it. he gets it from a mexican bodego, i see someones posted the reciepe, so thanks to both of you, now i can make it for him too.
