Cuisine of the Mid-Atlantic? ?

I could really use an interesting recipe from this region of the U.S. I have to give an oral presentation on this type of cuisine and I could use some insights and recipes if you please. Anything else you would like to contribute would be fine too! Thanks!

  1. Sadly it seems that our most famous ingredient is in-dangered. The maryland blue crab... You can make anything from it, from appetizers to main to dessert and you will never go wrong...

  3. I have to agree with libra, the most definable mid-atlantic cuisine is the blue crab.  

    You could do a sweet potato jack, basically a sweet potato pie turnover
