Cute & Easy Food Ideas???

My birthday is coming up soon and for my party everything (well the food at least) is going to be mini. So far I think I'm having mini hot dogs, mini bite-sized cookies and cupcakes and mini water bottles and sodas. So my question is does anyone have any cute recipies or food ideas for "mini foods" that work for my party???

  1. Mini Cheesecakes

    2 (8 ounce) packages cream cheese

    3/4 cup white sugar

    2 eggs

    1 teaspoon vanilla extract

    1 (12 ounce) package vanilla wafers

    1 (21 ounce) can cherry pie filling

    Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins (tassie pans) with miniature paper liners.

    Crush the vanilla wafers and place 1/2 tablespoon of the crushed vanilla wafers into the paper lined miniature muffin tins.

    Cream together with an electric mixer the cream cheese, sugar, eggs and vanilla. Fill each miniature muffin liner with this mixture, almost to the top.

    Bake at 350 degrees F (175 degrees C) for 15 minutes. Cool and then top with a teaspoonful of cherry (or any other flavor) pie filling.

    Easy Mini Quiches

    INGREDIENTS

    6 slices bacon, chopped

    1 onion, chopped

    3 eggs

    3/4 cup buttermilk baking mix

    1 1/2 tablespoons chopped fresh parsley

    2 cups shredded American cheese

    Preheat the oven to 350 degrees F (175 degrees C). Grease 2 mini muffin pans. In a large skillet over medium heat, fry bacon and onion together for about 5 minutes, or until bacon is crisp. Drain and set aside.

    In a medium bowl, beat the eggs. Stir in the baking mix, parsley, shredded cheese, bacon and onion. Spoon into greased muffin cups.

    Bake for 10 to 15 minutes in the preheated oven, or until the tops are lightly browned. Allow mini quiches to cool in the pan before carefully removing with a small knife or spatula.

    Mini Parmesan Scones

    2 tablespoons butter

    2 cups self-rising flour

    1 1/2 teaspoons salt

    1/2 cup freshly grated Parmesan cheese

    1/2 cup milk

    1/2 cup water

    1/4 teaspoon ground cayenne pepper

    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet.

    In a small saucepan, melt butter over low heat. In a large bowl, combine flour, salt and cheese. Make a well in the center of the flour mixture and add the butter, milk and water; stir gently to combine. Add water in small amounts until dough pulls together.

    Knead dough on a lightly floured surface until smooth and press out to 3/4 inch thickness. Cut dough into rounds with a floured 1 1/4 inch cookie or biscuit cutter. Place rounds on prepared tray and sprinkle lightly with cayenne pepper.

    Bake in preheated oven for 10 to 12 minutes. Handle scones gently until complete cool.

    Mint Oreo Truffles

    1 pkg. Double Stuf Oreos• use 22 cookies with cream centers included

    • use 10 cookies with cream centers discarded

    1 pkg. (8 oz.) cream cheese, room temperature

    chocolate bark or candy coating*

    Finely crush the cookies in a food processor or a ziploc bag with a rolling pin. Stir in softened cream cheese. Use the back of a large spoon to help mash the two together completely. Roll the mixture into 1" balls and place on wax paper covered cookie sheet. Place covered in freezer or refrigerator for a few minutes to help retain shape when dipping in melted chocolate. Melt chocolate as directed on the package and then dip balls into chocolate, tap off extra and set aside on wax paper covered cookie sheet to dry.

    Refrigerate and enjoy!

    You can serve mini-burgers (Sliders)

    1 1/2 lbs. ground beef

    1/2 C. very cold water

    salt and pepper to taste

    2 C. chopped onion

    2 T. butter

    package of 12 dinner rolls

    cheese slices if desired

    Saute chopped onion in the butter until translucent. Set aside.

    In a mixing bowl, mix ground beef, water, salt and pepper.

    Use a 2 oz. ice cream scoop and make into 12 balls. Heat a grill on the stove to medium high heat. Lightly spray grill with oil. Wrap the rolls in foil and heat in the oven, for about 8 minutes. Place the balls on the grill and mash down gently with a spatula. Cook on one side, about 3 minutes. Turn and top with a big spoonful of onions. Add a slice of cheese. Cook for 2 - 3 more minutes. Slice the warm buns in half and add the beef patties. Top with a pickles.

    Mini Custard Fruit Tarts

    6 prepared single-serving graham cracker crusts

    1 pkg. (3 oz.) vanilla pudding and pie filling mix (not instant)

    1/3 cup water

    1 can (12 fl. oz.) Evaporated Lowfat 2% Milk

    1 teaspoon grated lemon peel

    1 pkg. sliced fresh fruit (optional)

    Mint leaves (optional)

    COMBINE pudding mix and water in small saucepan. Add evaporated milk and lemon peel; stir until smooth. Cook over medium-low heat, stirring constantly, until mixture comes to a boil and thickens. POUR into crusts; refrigerate for 1 hour or until set. Top with fruit and mint leaves before serving. VARIATION: For a Key Lime twist to this recipe, substitute 2 teaspoons fresh lime juice and 1 teaspoon grated lime peel for the grated lemon peel. Top with lime slice.

  4. I would make a bunch of little crusts with a pate au choe recipe (cream puffs) and fill with anything that sounds good. Pate au chou is super easy. I found a link to a recipe like the one I use

    I've filled them with a cheese sauce and brocolli, cream sauce with ground beef, taco seasoned beef, minced mushrooms and filet mignon and all sorts of dessert goodies.

    You can dress them up or down depending on what you like.
