Cutting boards?

I want to buy a good cutting board. What do the pros use? And where to buy it?

  3. Bamboo is a great renewable "wood" that is great for kitchen tools. I actually own many, I like a big board for preparing a big meal, I have a smaller bamboo board and cheese board(that was a gift!) that are quite nice to look at. Also I have a few of the pliable plastic ones-which are good because they are cheap and larger and you can curl it to drop right into your bowl.

        Here are some benefits of bamboo:

        Bamboo absorbs very little moisture. This means that any cutting board made from bamboo is far less prone to warping and cracking than boards made from traditional woods.

        Bamboo does not harbor bacteria easily. Because Bamboo is hard and non-porous, there is little chance of bacteria entering the wood along with water or other fluids.

        Bamboo is more durable than hardwood. While bamboo is technically a grass, the wood that is harvested from the massive shoots -which may reach up to 120 feet tall and 8 foot wide!- is in fact harder than maple or oak. This means that even the sharpest cooking knives will not easily scar it.

  5. Wood is nice, but make sure that it's a very dense and close-grained hardwood, like hard rock maple, which is the most widely used.

    The open grained woods, like oak, walnut, mahogany, etc. will hold bacteria, which in this day and age is of increasing concern, what with continual threats of salmonella, e-coli and a host of other mircrobes coming home with the food sold to us in grocery stores. If you select wood, make sure its a wood like Maple.

    Really, the best ones are the rubber/plastic ones that are used in commercial kitchens, but they are not as beautiful as a wood cutting board. But they are very easy to keep clean and sanitary and they're easy on your fine knife edges.

  6. Pros, as in restaurants?  Typically heavy polyethylene boards, found in any restaurant supply store.

    Some prefer end grain maple, which is usually the high end cooking stores.
