  1. here are a few recipes...i hope some of them help....

    POLISH CHEESE CAKE  

    PASTRY:

    2/3 c. milk, scalded and cooled

    1 tbsp. sugar

    1 pkg. dry yeast

    3 eggs

    1 c. butter

    2 1/2 c. flour

    Granulated sugar

    FILLING:

    4 (8 oz.) pkgs. cream cheese, room temperature

    2 egg yolks

    2 c. sugar

    2 tbsp. vanilla

    Beat together to mix well.

    Combine milk and sugar in bowl. Add yeast and mix until dissolved. Mix in eggs. Cut butter into flour as you would for pie crust and add the milk and yeast mixture blending well. Divide into two parts. Mold the first half into 9 x 13 x 2 inch pan. Add the prepared filling to this. Stretch and mold the second half of pastry to cover top of pan over the filling. Flute the edges.

    Poke holes in top with fork and sprinkle with sugar. Let set 1 hour. Bake at 350 degrees for 30 minutes. (Can roll out the crust - does not have to be molded and stretched).

    POLISH COFFEE CAKE  

    1 1/2 c. scalded milk

    1/4 lb. butter

    Combine and let cool until lukewarm. Add: 1/2 c. beaten egg yolks (about 5 or 6) 1/2 tsp. vanilla 1/2 tsp. salt 3/4 c. sugar

    Beat the above ingredients and add 1/2 grated orange rind (grate 1/2 of the orange rind). Add 1/2 cup raisins and 5 cups of flour. Cover and let set until double, then knead down and let raise second time. Put in 3 pans and let raise again.

    TOPPING:

    1/3 c. sugar

    1/3 c. flour

    3 tbsp butter

    1 tsp. mace

    Moisten to make stick. Or frost with regular frosting. Bake at 300 degrees for 25 to 30 minutes.

    POLISH CAKES  

    2 tbsp. butter

    2 c. flour

    5 egg yolks, lightly beaten

    1/4 c. milk

    1/4 tsp. salt

    1 tbsp. rum

    Flour for flouring board, oil for deep frying

    Vanilla confectioners sugar

    1 vanilla bean in 2 c. confectioners for 2 or 3 days

    Cut butter into flour. Add egg yolks and milk mixed with rum. Dough should not be too wet. Beat dough against board until bubbles appear. Set aside 30 minutes, working with small amount of dough, roll into a sheet 1/8 inch thick. Cut into long strips about 1 inch wide by 4 inches long, cutting end diagonally. Makes slit in center and pull one end through. Heat oil to 350 degrees. Fry a few at a time. Put on paper towel. Sprinkle confectioners sugar (vanilla). Makes 48.

    POLISH TEA CAKES  

    1/2 c. butter, softened

    1/2 c. sugar

    1 slightly beaten egg yolk

    1/2 tsp. vanilla

    1 c. plain flour

    1/2 tsp. salt

    1 egg white

    1 tbsp. water

    1/2 to 3/4 c. chopped nuts

    1/2 c. fruit preserves

    Cream butter and sugar until fluffy. Add egg yolk and vanilla. Mix well. Combine flour and salt. Stir into creamed mixture. Form dough into 1 inch balls. Dip in mixture of egg white and water.

    Roll in nuts. Place on ungreased baking sheet. With a thimble, make indention in each cookie. Bake at 325 degrees for 1 minute. Press indention again. Bake 2 to 5 minutes more. Cool on rack. Fill with preserves while warm. Makes 30.
