I've heard the Rumba Room up at City Walk is a good time. I took a few salsa lessons at Mama Juana's Lounge in Studio City. It's a small spot, but they have some terrific live bands.

I think the Mayan Theater plays that stuff but im not sure

Yeah, the Mayan is off the hook.  You'll LOVE it there.  I've been a few times including New Years and it was awesone.  The site below has picures of it too.  Have fun!
