  1. Yes the Seacat is very fast - it has 4 massive engines and you wont get seasick. I went from Portsmouth to Cherbourg on one.  Check the weather forecast if you can before you book.

  2. I don't think the seacat runs that route any more.  Your only choice is Transmanche Ferries on the conventional ship, which takes about 4 hours.  Still good fun, though, and doable as a day trip.  I recommend getting a cabin for at least one of the legs of the journey, to get some rest and privacy.  Also, check which ship you get booked on.  The big one is a lot less comfortable and modern than the smaller one, believe it or not.  I have done the journey a few times as I used to live just a couple of miles from Newhaven.

Dieppe's lovely.  A really nice town centre, with loads of shops, just a few minutes' walk from the ferry terminal.  You can also catch a bus from town to the big hypermarkets, which takes about 10 minutes or so.  Details from the tourist info centre, which is also near the ferry terminal.

If you get a late boat back to Newhaven, check that the trains to Brighton are still running at that time of night!

  3. Google 'Newhaven/Dieppe crossings'.

Sites there with info, tickets, pricing etc.
