Delicious Chicken Dishes?

Its my boyfriends birthday soon and i want to cook him something special instead of going out. I'm doing apple pie for pudding but I'm vegetarian and know no nice chicken dishes to cook. Admittedly it doesn't have to be chicken so any meat dish. Suggestions would be greatly appreciated.

  1. I am vegetarian too and my hubby  is crazy abt  chicken  I have tried  recipes from you tube of vahchef he is one of the best of Indian chef.and I hope it's video so u will get an idea of all ingredients and methods of cooking. Happy cooking!


  2. 1. wrap chicken breast in cling film place in boiling water for about 5-10 minutes simmering until sealed, take out of water discard clingfilm wrap with streaky bacon (normal bacon is ok but not as good) cook in an oven until bacon is almost cooked but not crispy or burned, pour over bbq sauce (preferebly reggae reggae sauce as it has a kick to it and tastesa great) sprinkle over cheese and bake in oven until cooked about 15 minutes

    2. Heat 2tbsp oil in a large pan, add 2 crushed garlic cloves to allow flavour to infuse. Add 4 chopped chicken b*****s and season well, allow to gebntly brown all over but not burn, add a glass of dry white wine and allow this to evaporate, add 3 sliced roasted peppers with skins removed and seeds removed with 1kg de-sknned and deseeded tomatoes, simmer gently for 20 minutes the tomatoes break down for a sauce serve with pasta

  4. Lemon-Apricot Chicken

    Wake up dinner with crispy-coated baked chicken covered in a refreshing lemon and apricot sauce.

      

      

    1/4 cup fat-free cholesterol-free egg product or 2 egg whites

    2 tablespoons water

    1 cup Bisquick Heart Smart® mix

    1 tablespoon grated lemon peel

    1/4 teaspoon garlic powder

    6 small boneless skinless chicken b*****s (1 lb)

    2/3 cup apricot preserves

    2 tablespoons lemon juice

    1/2 teaspoon soy sauce

    1/4 teaspoon ground ginger

    Lemon slices, if desired

    1. Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. In shallow bowl, beat egg product and water slightly. In another shallow bowl, mix Bisquick mix, lemon peel and garlic powder.  

    2. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick. Dip chicken into egg mixture, then coat with Bisquick mixture. Place in pan. Spray chicken with cooking spray.

    3. Bake uncovered 20 minutes. Turn; bake 10 minutes longer or until juice is no longer pink when centers of thickest pieces are cut. Cut chicken crosswise into 1/2-inch slices.  

    4. In 1-quart saucepan, mix all remaining ingredients except lemon slices. Cook over medium-low heat until hot, stirring frequently. Cut chicken crosswise into 1/2-inch slices; pour sauce over chicken. Garnish with lemon slices.

    How-To  

    You can use a meat mallet, rolling pin or even a wine bottle to flatten chicken breast halves. Just pound each breast down to 1/2-inch thickness. This helps the meat cook quickly and evenly.

    Serve With  

    Serve this citrus-kissed chicken with basmati rice. Basmati rice has a wonderful nutlike flavor and fragrant aroma. It can be found in Indian and Middle Eastern markets and in many supermarkets.

    Substitution  

    Check your pantry! Peach or orange preserves can be substituted for the apricot preserves for an equally delicious dish.


  5. How about a stir fry?  A bit of thick noodles mixed with a few vegetables (peppers, spring onions etc) then for him you could just add chicken.  A bit of sauce (try chow mein sauce).  There you go.  An easy meal for 2 and it takes like 5-10 minutes to cook, literally.

Go to allrecipes.com and cooks.com they have wonderful chicken recipes   simply type in chicken in the  browser bar  many will pop up One of my personal chicken favorites is Chicken Parmesan   take some chicken b*****s ( frozen and defrosted or fresh)  roll in  Italian bread crumbs with garlic powder ,a little oregano ,1/2 cup Parmesan cheese or as much as you like & salt & pepper  then brown in hot oil put in baking pan  pour spaghetti sauce jar or homemade  cover b*****s with sauce well, sprinkle with  parmesan cheese and bake 375degrees about 35 min to 1 hour  hour ( I cover mine with foil )take out and cover with  shredded or sliced mozzarella cheese  & put back in oven  but do not cover this time  bake till cheese is bubbly MM mm  great with a salad and hot garlic bread  Chicken wings are great too  soak in buttermilk for a few hours then take out and   roll in flour salt& pepper then deep fry.some times I add a few dashes of hot pepper sauce to my buttermilk  but it is personal taste,make some mac& cheese and maybe a side of green beans or a nice salad . you can even have some blue cheese dressing ,ranch dressing ,and barbecue sauce in pretty bowls around for dipping  the wings in  He will love you forever ..

  8. Chicken Ripieno

    put Bacon, Mozzarella cheese, chives, garlic and some raw chicken in a food processor.  Blend until smooth and pipe it back into the chicken.  (you will have to cut a pocket in the chicken breast first though) back at 180 degrees c for about 20 mins and put on top of roasted vegetables.  Add seeded mustard to cream and bring to the boil reduce until thick, add grated parmesan and serve on the chicken i sell about 50 of these a week at my work.

If I were you I would stick to plain roasting.  You arent going to want to taste it as it cooks and trying to follow different recipes without tasting can be disasterous.  But Just roasting a chicken, with some Garlic powder, Onion powder, ginger, Thyme, a dash of sage, and papricka, rubbed into the skin, you cannot miss.  Get a meat thermometer and follow the below roasting guidlines, but do not forget to let the chicken rest (sit uncut or disturbed) for at least 10 minutes, otherwise all your juices will run out of it and it will then become very dry.

    Wash chicken thoroughly in cold water and pat dry with a paper towel. Chicken should always be cooked until well done. For best results, particularly when roasting a whole stuffed chicken, use a meat thermometer inserted in the meatiest part of the bird. Internal temperature for a whole chicken should be 165°F (74°C) when the chicken is done.

    You can make a visual check to see if the chicken is done by piercing it with a fork. You should be able to insert the fork with ease, and the chicken juices should run clear. Chicken is thoroughly cooked when it is no longer pink inside.

    Roasting

    Wash whole chicken inside and out under cold running water, then pat dry with paper towels. Mix together 1 teaspoon salt and 1/4 teaspoon pepper; sprinkle over outside of whole chicken and inside body cavity, or stuff with bread crumbs, herbs, spices, and vegetables if desired. Hook wing tips under the back of the chicken. Place chicken breast side up in a shallow pan. Roast in preheated 350°F (180°C) oven for 1 hour or until internal temperature reaches at least 165°F (74°C). Let stand 10 minutes before carving.

  11. Creamed Chicken is so easy to make and is extremely delicious and looks professional if presented right!

    You will need:

    2tbsp. Olive Oil

    1 Onion

    1 green Pepper

    125g. sliced mushrooms

    500g. Pre-cooked chicken pieces

    500g. Sour Cream

    250ml. Warm Water

    2tbsp. Heaped, All-purpose flour

    Salt & pepper

    Method:

    Stir fry you vegetables in the oil for 2-3 minutes until golden. Add chicken and heat/fry for 10 minutes to ensure it's cooked. On a medium-high heat add sour cream (milk or normal cream can also be used, but I prefer sour cream) and water and heat until boiling. Add flour and stir until just thick. Adding a little more if necessary.

    Serve Hot!

    It can be changed around, ingredients decreased or increased according to your preferences. Add chili flakes and turmeric for a little kick! You can also try substituting chicken for tuna.
