  1. There is always pasta! It's very yummy, easy, and versatile. There's tons of great pasta recipes online, plus you can experiement and invent your own.


  2. Last night I had white beans, hominy and collard greens. Tonight I had mushroom soup, whole grain bread and sliced tomatoes.Friday I had a large salad and garlic cheese bread. Tomorrow I will have cheese ravioli with sauteed onion, mushrooms and zucchini.

  5. Clean and marinate any fish (can use salmon, if you like it) in a tablespoon of oil, and any spices you wish (chili powder, garlic powder, corainder, turmeric etc..) for a couple of hours (1/2 hr is okay if in a hurry).

    Then heat a little oil (just enough to coat) on a pan and cook fish on each side for about 5-6 minutes or until done. (on medium heat)

    If you eat rice and spinach , then wash 1 cup rice -- add 2 cups water and put in microwave. Make sure container is deep enough (leave room for vegetables). Put it in for 10 minutes. After 10 minutes take it out and add frozen spinach (1/2 packet or any other frozen vegetables that you like). Mix thoroughly and cook an additional 10 minutes. After cooking let it rest for 5 minutes. meanwhile melt 2 tablespoon butter/oil. add garlic if you wish or cumin seeds if you have it. In a few seconds the garlic/cumin seeds will brown. Mix with cooked rice.

    Serve fish with lemon/tartar sauce and rice.

    This is one of my favorite meals and is very easy to cook. All of 25 minutes if you cook the rice and fish simultaneously.
