How about this; how often you need to get gas is a function of how much you drive and how many mpgs your car gets.

I can think of hundreds. The amount of soda/ food u need to purchase depends on the number of people at your party. The amount of gas u use is a function of the miles you drive. If you pay for phone service by minute or txt message a function could model this

Well there are simple equations such as your bank account balance. It could take in a parameter such as a salary and perform operations on it to include interest, and withdrawls for insurance/rent/etc.

There are also more complicated equations called differential equations and you can model predator/prey systems with them to monitor the populations of say foxes and rabbits. These are used to determine if an animal will go extinct in a certain area.
