Hi, Although I'm not a whitewater canoer, I know of some great online resources.   Canoes float just fine when they're upright, but obviously they fill with water quickly if you don't have float bags installed.  The paddling.net article below details the installation of float bags.  If you're doing big water, Class 3 or above, you NEED float bags.  Class I wouldn't necessarily require them.    Best bet is to take whitewater classes from a river outfitter, to make sure you are equipped and that you are comfortable with river rescues.
