    Sticky Toffee Pudding

    Ingredients:

    2 oz. butter

    6 oz. granulated sugar

    1 egg

    8 oz. plain flour

    1/2 tsp. Baking Powder

    1/2 pt. hot water

    1/2 tsp bicarb (baking soda)

    6 oz. stoned dates (pitted)

    vanilla essence (vanilla flavoring)

    Directions:

    Cream butter and sugar, add egg and beat for a few minutes. Fold in flour. Soak dates in water with b. powder, bicarb and essence. Sitr into flour mixture. Turn into 7X7 pan (I use 9 by 9), greased and bake approximately 30-40 mins. moderately hot oven.(325-350). Melt 3 oz. butter in saucepan, add 6 oz. brown sugar, (dark, soft brown sugar for richer topping) and 1/4 pt. whipping cream and boil for 2-3 minutes until fudgy. Pour over hot pudding. ENJOY!!

    LEMON CURDS (serve with biscuits, crumpets...)

    Ingredients:

    2 sticks (1/2 pound) unsalted butter, softened

    1/2 cup fresh lemon juice, strained

    1/2 cup sugar

    3 large egg yolks

    Directions:

    In a medium bowl set over a saucepan of simmering water, melt the butter with the lemon juice and sugar, stirring occasionally, until the sugar is dissolved. Whisk in the egg yolks, 1 at a time, and cook over moderately high heat, whisking constantly, until the curd is the consistency of loose sour cream, about 15 minutes. strain the curd into a bowl and press a piece of plastic wrap directly onto the surface to prevent a skin from forming. Refrigerate before serving.

    Makes about 1 1/2 cups
