Difference between Condensed, Skimmed, Evaporated milk & their substitutions?

Is there is any differences between the above mentioned milk types? Please suggest some alternate for all three types. And also let us know whether can i use Blue CAN milk for preparing cakes.

  1. Evaporated milk, also known as dehydrated milk, is a shelf-stable canned milk product with about 60% of the water removed from fresh milk. It differs from condensed milk which contains sugar. Condensed milk requires less processing because the added sugar inhibits bacterial growth.

    Skim milk is just regular milk with the fat taken out.

    Evaporated milk can stand high temperatures without curdling, making it a good choice used whole-strength in recipes to add creaminess to thick sauces, puddings and crockpot recipes. It's also good as a dipping liquid for breading meats, fish, and poultry. If need be, very cold whole evaporated milk can be whipped, but it will collapse quickly. Whip just prior to serving and don't expect to store any leftovers. The natural lactose sugar is concentrated in evaporated milk, so you may need to reduce the sugar when using it as a fresh milk substitute in recipes. To substitute, one cup whole milk is equivalent to 1/2 cup evaporated milk plus 1/2 cup water.

    Since condensed milk contains sugar, it's important that you read your recipe carefully to know whether you need evaporated or condensed milk. They are generally not interchangable. Condensed milk is very popular for use in desserts and sweets. You can cut the caloric count down a bit by reducing the sugar in the recipe.   2. Condensed milk and evaporated are the same thing but there are sweet and unsweetened types . Skim milk is non fat. You can use soy milk in recipes. I'm not sure what blue can milk is. If you are using sweetened condensed milk in a recipe, be sure to cut down on the sugar.
