Difference between instants and sorceries that do the same thing??

This is a scenario where I have a 4/4 on the field and my opponent has a 2/2 and a 1/1. I also have a terror and a shriekmaw in my hand with only 2 open mana. I want damage to go through. I always thought the difference between the spells in my hand were that when a chump block was declared, I would be able to use the terror to allow damage to go through. The only thing I could think of otherwise would be to use the instant as a sorcery, destroying my hopes of winning that round. Would the instant at least prevent my 4/4 from dying if the chump block had death touch? However, that still leaves me to believe the instant prevents combat damage from hitting my creature, allowing my attacking creature to go through to my opponent. Please help...
