  1. Plain four has all the nutrients bleached out. But wheat flour still has some of the nutrients. Thats what makes wheat some much healthier that plain.


  2. Avoid Bleached flours its silly to eat something that was bleached.  I don't know why they even did that, I bake all the time with whole flours, unbleached.

    I like RYE Flour personally or Rolled Oat .  anyways yeah there is a lot less fiber in bleached which is very important to over all health of humans and animals alike, plus other vitamins and minerals.

    Look in the sources for the nutritional Data on each see the huge difference in Fiber its much less healthy.

  3. both are made from wheat.  Whole wheat flour has all the parts of the wheat grain still in it while the white flour had these things removed and has been bleached.

  4. white flour is processed  bleached  and pretty much striped of most of the nutrients. wheat flour isn't. :)

  5. A wheat berry has three layers. The outer most layer is bran with many B vitamins and minerals. The inner core is called germ or wheat germ. Wheat-germ is a fat.

    In between the bran and the germ, we have endosperm. Endosperm is basically all starch.

    To make regular white flour, the bran and the germ are removed. Only the endosperm is ground. This type of flour has minimum amount of nutrients.

    For whole-grain flour, the entire wheat berry is ground preserving almost all the nutrients.

    For Wheat flour, part of bran and all of the germ are removed. So you have some of the nutrients from the bran.

    The wheat-germ is fat and becomes rancid with time. That's is the reason to remove wheat-germ. The bran was removed in early 1920 to make the bread look white and soft. White also gave the impression of purity.

Plain flour is actually wheat flour.  They're the same thing.  Most flours are just the milled and processed wheat grain.  (Of coarse there's also oat flour, spelt flour, rye flour, etc)  Many of the breads sold in stores may say that they are "wheat" on the package to make it look like they are healthier when in fact it's just like the flour in the white breads, but it has some food coloring or molasses added to give it a brown tint.  Most all breads add back some of the nutrients that are lost through processing.

    Now WHOLE wheat is a different story.  That's minimimally processed and includes the natural nutrients and fiber found in wheat. Some people pick up wheat flour when they are actually looking for whole wheat and don't realize the difference.

    So bottom line is that, in general, when people refer to plain flour they are often talking about all purpose flour that is made from the refined wheat grain.
