Different Cookie, Extremely Good?

I am looking for cookies that are really different, but extremely good. Please share your recipes?

  2. Instead of using one egg use 1/4 cup of apple sauce

    instead of shortening use margarine.

    I do this and they come out so yummy.

  3. Well you haven't mentioned your specific tastes. Cookies I have just recently made were homemade Samoas Cookies. (GirlScouts) They were exceptionally good and very different, especially to make. This recipe is VERY much time consuming. I will list the recipe I got off of a cooking website. (I cannot remember which)

    Ingredients:

    For the Cookie:

    -1 Cup Butter Soften

    -1/2 Cup Sugar

    -2 Cups Flour

    -1/4 TSP. Baking Soda

    -1/2 TSP. Salt

    -1/2 TSP. Vanilla Extract

    -2 TBS. Milk (I used water because I was out of milk)

    Topping:

    -3 Cups Shreaded Sweetened Coconut

    -12 Oz. Caramel (I used already melted Caramel ment for ice cream topping. You have to melt the Caramel anyways. I found this easier)

    -8 Oz. Chocolate Chips

    Other things you'll need:

    -Baking Pan (Two or three, if available)

    -Parchment Paper

    -Rolling Pin

    -1.5 Inch Cookie Cutter

    -Wax Paper

    Directions:

    *Preheat oven to 350F

    *Cream together butter and sugar. Mix in flour, salt, and baking soda. Add the vanilla next. Add milk as needed. (You want the dough to stick together, not being sticky)

    *Roll the dough to 1/4 inch thick. Cut cookies with the 1 1/2 inch cookie cutter. Place on parchment paper and cut small holes in the middle of the cookie.

    *Bake 10-12 minutes, until golden brown.

    *Cool completely!

    *Lower oven temperature down to 300F.

    *Spread coconut on a cooking sheet lined with parchment paper. Toast in oven for 20 minutes, mixing every five minutes. It should come out slightly browned.

    *Melt the chocolate in the microwave, mixing every 45 seconds. Repeat until chocolate is smooth.

    *Dip the bottom of the cookies in the chocolate and set on wax paper until chocolate is set. (Refridgerate for quicker chocolate hardening)

    *When chocolate has hardened, flip the cookie over. (So ithe chocolate covered side is face down) Mix together the coconut and caramel. Scoop topping onto each cookie. Drizzle with chocolate on top if desired.

    *Store in airtight container when chocolate has completely set.

    I LOVED this recipe and so did my family. My brother is not fond of coconut or caramel at all and he loved the cookies. If you have the time, I would highly recommend trying out this recipe. All in all, these cookies are indeed extremely good.
