Dinner ideas for 4??????

for 4, me my husband and 2 kids are looking for normal foods for the month..like steak potatoes and a vegie. No rice and beans or anything like that...ugh...any ideas would be helpful..

what goes with kilbasa besides saurkraut husband wont touch saurkraut...

wha about what goes with baked potatoes?

  1. Alternative to Saurkraut...........Balsamic Onions

    Slice Red Onions and slowly cook until they slightly turn golden brown

    Add a little Balsamic Vinegar and a pinch of sugar cook until all liquid is gone.

    Sesame Almond Chicken

    Breading:  Fine chopped almonds sesame seeds and panko bread crumbs (Japanese style bread crumbs)

    To bread: dip in flour then egg then the breading

    Cook in a little bit of olive or vegetable oil til brown on both sides and finish in the oven.

    I serve raspberry sauce with the chicken

    stuff to make w/baked potatoes:

    meatloaf (my recipe)

    -1lb ground beef

    -1 packet plain instant oatmeal

    -1 large egg

    -1/4 cup ketchup (or bbq sauce)

    -1/2 cup onions (optional)

    -garlic powder and pepper to taste

    mix everything in a bowl (I use my hands b/c it mixes better) then place in a casserole dish and shape into a loaf. spread extra ketchup or bbq sauce over top and bake at 350 for about 30-45 mins.

    serve w/potatoes and green beans.

    chicken teryaki (my recipe)

    4-5 boneless, skinless chicken b*****s cooked and diced into bite size pieces (cook them in oil for about 4-5 mins a side in a skillet)

    Sauce:

    in large bowl combine:

    -1/3 c soy sauce

    -2 tbsp honey (put in microwave for about 15 seconds to melt it first)

    -2 tbsp oil (canola,vegetable,or olive)

    -1 tbsp brown sugar

    -lemon juice to taste

    -1/2 cup water or chicken broth (can add more if you like)

    -1 clove garlic, minced

    pour sauce over chicken pieces and let simmer for about 10 mins. add 1-2 tbsp of flour to help thicken sauce as desired.

    serve chicken over rice or noodles (we prefer brown rice and green beans or stir-fry veggies on the side).

  4. Check out Women's Day or Good Housekeeping magazines for monthly menus you might enjoy.  In the meantime:

    1.  Kielbasa is great grilled and served with baked beans with bacon and brown sugar, corn on the cob, and a chopped salad.  If you husband doesn't like baked beans, then you might try kielbasa with macaroni and cheese and a green salad.

    2.  Pork chops and mac and cheese:  6 porkchops, bone in, seasoned with seasoned salt and fresh ground pepper; 1 yellow onion, sliced into thin rings; 2 packages mac and cheese; 1 T yellow mustard; 1 3oz container cream cheese; 3 T olive oil.  Heat oil until it shimmers.  Place chops in hot oil to sear.  Brown on both sides and place on paper towels to drain.  Add onions to hot oil and saute until tender and translucent.  Make mac and cheese according to package directions.  Add cream cheese and mustard.  Place in baking dish.  Top with pork chops and place some of the onions on top of each chop.  Cover and bake at 350 degrees for 45 minutes.

    3. Meatballs and mashed potatos, fresh asparagas.  To 2 lbs lean ground beef, add 1 tsp kosher salt, 1/2 tsp fresh ground pepper, 3 T worcestershire sauce, 1/2 yellow onion, chopped fine; 2 eggs; 3/4 cup Italian bread crumbs.  Mix and form into 2 inch meatballs.  Top with a mixture of 1 can cream of mushroom soup mixed with 1/2 cup sour cream, and 1 jar beef gravey.  Cover and bake at 350 degrees for one hour.

    4.  Baked potatos can be topped with lots of nice stuff, such as sour cream, bacon bits, chopped green onion, butter, shredded cheese etc.  You can also turn plain baked potatos into a main dish by topping with your favorite chilli con carne and shredded cheese.

    5.  Grilled chicken, corn on the cob, fresh fruit salad:  Marinate boneless, skinless chicken thighs and b*****s overnight in Italian dressing.  Drain and grill over hot coals.  Remove silk from corn, keeping husks intact.  Pull husks up over the corn and place on hot grill or in the microwave.  Cook until tender and cooked thru.  Rub with butter mixed with chili powder and salt.

    This is REALLY Delicious;

    1/2 cup milk

    1 egg, beaten

    1 cup all-purpose flour

    2 teaspoons garlic salt

    1 teaspoon paprika

    1 teaspoon ground black pepper

    1/4 teaspoon poultry seasoning

    1 (4 pound) whole chicken, cut into pieces

    3 cups vegetable oil

    1 cup chicken broth

    1 cup milk

    In a medium bowl, beat together 1/2 cup milk and egg. In a resealable plastic bag, mix together the flour, garlic salt, paprika, pepper and poultry seasoning. Place chicken in bag, seal, and shake to coat. Dip chicken in milk and egg mixture, then once more in flour mixture. Reserve any remaining flour mixture.

    In a large skillet, heat oil to 365 degrees F (185 degrees C). Place coated chicken in the hot oil, and brown on all sides. Reduce heat to medium-low, and continue cooking chicken until tender, about 30 minutes. Remove chicken from skillet, and drain on paper towels.

    Discard all but 2 tablespoons of the frying oil. Over low heat, stir in 2 tablespoons of the reserved flour mixture. Stirring constantly, cook about 2 minutes. Whisk in chicken stock, scraping browned bits off bottom of skillet. Stir in 1 cup milk, and bring all to a boil over high heat, stirring constantly. Reduce heat to low, and simmer for about 5 minutes. Serve immediately with the chicken.

    Serves 8.

    You can even mix some of the gravy with mashed potatoes and it's really really delicious or at least I love it...

    You can make some onion rings too, thats if your kids like.

    This steak in mushroom gravy is also delicious;

    1 pound ground beef

    1 egg

    3 tablespoons crushed buttery round cracker crumbs

    2 tablespoons finely chopped onion

    1/2 teaspoon salt

    1/2 teaspoon pepper

    1/4 teaspoon poultry seasoning

    2 (4 ounce) cans sliced mushrooms with juice

    3 tablespoons butter

    3 tablespoons all-purpose flour

    3 cups milk

    3 cubes beef bouillon

    In a medium bowl, mix together the ground beef, egg, cracker crumbs, onion, salt, pepper and poultry seasoning using your hands. Shape into 6 patties about 1 inch thick.

    Fry the patties in a large skillet over medium-high heat for 3 to 4 minutes per side, or until browned. Drain off grease, and remove patties to a platter; keep warm.

    Melt the butter in the same skillet, and add the mushrooms. Cook and stir for about 2 minutes. Sprinkle the flour over, and mix in until blended. Stir in the milk and beef bouillon. Cook and stir over medium heat until smooth and starting to thicken. Return the patties to the gravy and cook over low heat, uncovered, for 10 minutes, stirring occasionally.

    serves 6.

    Asparagus Parmesan

    1 tablespoon butter (optional)

    1/4 cup olive oil

    1 pound fresh asparagus spears, trimmed

    3/4 cup grated Parmesan cheese

    salt and pepper to taste

    Melt butter with olive oil in a large skillet over medium heat. Add asparagus spears, and cook, stirring occasionally for about 10 minutes, or to desired firmness. Drain off excess oil, and sprinkle with Parmesan cheese, salt and pepper.

    Serves 5.
