Question:

Dinner ideas for my girlfriend (who just broke her wrist and had surgery) and her family?

My friend broke a major bone in her hand and wrist over the weekend and has to have surgery today. Her husband works late and isn't the best cook to boot either.

Yesterday I made lasagna and tonight I am making chicken and dumplings in the crock pot. So three more days to go and possibly the weekend and I am out of ideas. Any help? Preferably something that I can make the night before and just take and warm up or something that can go into a crock pot and cook while I am at work. Thanks for your help.

  2. What a great friend you are!

    How about Beef Stew in the crock pot, pot roast with potatoes and carrots.  Chicken Enchiladas , Taco Salad, just mix it up before you take over there.  Maybe a cold cut tray with cheese, meat and veggies, and variety of breads or crossiants, and chip and dip.  Hope this helps!  :))

  3. What an Angel you are for helping out.......My suggestion??  Since she is incapacitated on one side, make her something that doesn't require the use of BOTH a knife and fork at the same time.....:

    If you're using a crockpot, most things that come out are "fork tender" so you might want to go to Food Network and type into the search engine Crock Pot Recipes.....God bless you for being such a good neighbor......Remember, what goes around, comes around......

  4. Italian-style meatballs. You could bake/fry them and put them in the crockpot with a pasta sauce and they could have them with pasta or as meatball sandwiches. Surely he can cook pasta.

    Chili or chili mac is always a good bet. So is meatloaf. What about a soup like split pea or Italian wedding soup? Enchiladas?

  5. You can make hamburger soup.  It lasts for days.  Also homemade chicken noodle soup is great. Make a roast in the crockpot with all the veggies in it. Casseroles are good that include the meat and veggies.

  7. Here's a SUPER recipe for the crockpot, and it's sooooooo easy!

    One Purdue Oven Stuffer Roaster chicken (or other brand if you can't get Purdue)

    2 carrots, cut into 3/4-inch disks

    1 large onion, roughly chopped

    2 stalks celery, cut into 1-inch pieces

    Cavender's All Purpose Greek Seasoning

    Olive oil

    Salt & Pepper

    1 cup water

    1 cup white wine

    Put cut vegetables in bottom of crockpot.  Add water and wine.  Clean chicken and pat dry with paper towel.  Season inner cavity with salt and pepper.  Rub back of chicken with olive oil to coat and sprinkle generously with Greek seasoning.  Put into crockpot, back down.  Rub breast area with olive oil and sprinkle generously with Greek seasoning.  Cook on low for 8 hrs or on high for 4-5 hrs.  When done, remove chicken to carving platter, strain out veggies from liquid, put liquid in saucepan and thicken over medium high heat with a slurry of corn starch and cool water.  The gravy is fantastic!!!!

    I like to serve it with white rice and crisp, sauteed green beans.
