what's the difference between the two and which is harder?

also, what are the different jobs available if one wants to work in an embassy? :)

An ambassador is one type of diplomat.  Ambassadors are, essentially, the chief diplomatic officer sent from one country to another.  A country posts lots of ambassadors around the world, but only one per country (if any at all).  Ambassadors don't have to have a lot of experience, may have no poltical background, and are often appointed by the president as a personal favor.  Anyone else who works in a foreign country in a diplomatic context, either at the embassy, or for the state department, or in other capacities, is considered a "diplomat."  This can range from secretarial work, to foreign relations.
