i rode on the riverboat and when the boat was turning i felt like the boat was running on guiderails

That's because it is.  Most Disney "boat" are actually supported on railroad like wheel carriages and they follow the track which is just a few feet under water.  This is done for several reasons.  The boat can't capsize and the Number of passengers makes no difference.  On several rides the Helm, or "Wheel" isn't connected to anything.  The paddle wheel makes a lot of splash but isn't the primary propulsion.
