yes they do but depanding on the species of chameleon some will only change from green to dark green and others will change more.I have a panther chameleon nose be .that is bleu and when he is in his plant he became light green as the leaves. i resd that they will also change colors due to their emotions and the males will be at their beautifullest colors when its breading season and they want to mate.

No although most do. Alot of the ground dwelling chamelians stay brown or only change slightly and this color change takes hours kind of like tree frogs
