Is it considered a dessert (popular?) in the Philippines (Spanish influence and all), or is that just in my family?

  2. Yes! Specifically, it is called Leche Flan, emphasizing the amount and quality of milk that goes into the recipe.

    No fiesta, no birthday party, no family gathering is complete without Leche Flan. A good glass of halo-halo (a Filipino concoction of shaved ice, preserved fruits, milk and sweets) is judged by the amount of Leche Flan on top.

    On some parts of Cavite, Bulacan and Batangas, the only milk acceptable for making Leche Flan is carabao (water buffalo) milk, which is richer in cream than cow's milk.

    Purists will not make Leche Flan without a grating of the peel of native lime called Dayap.

    The first step for making Leche Flan is caramelizing white sugar right in the same aluminum mold (oval is the most popular) or molds for the flan. Once light brown, the caramel is made to swirl all over the inside of the mold to cover the entire surface.

    The flan itself is composed only of milk, egg yolks, sugar, a drop of vanilla and some grated dayap skin. Beaten well, then strained, the mixture is poured into the caramel-lined mold.

    To cook flan, use a steamer.

    To serve, wait until the flan is cold before inverting the mold into the serving plate. The caramel lining will prevent the flan from sticking tot he mold, while at the same time providing a caramel-butterscotch flavor to the custard.

  9. Yes as a filipina  growing in the Philippines we always have Leche Flan for dessert,I have tried the Mexican Flan but it is different from Filipino flan, maybe because we use Egg yolk only .
