Do I need to adjust my cooking gas vs. electric oven?

My mom passed down alot of recipes and they come out ok but she had a gas oven. I have an electric oven and I see some differences in the texture of the cooked product. I think gas puts more moisture in the foods cooking? Are there any adjustments in temperature or cooking times that I need to do?

  1. Oven temperatures vary from oven to oven by up to 25°. They also vary front to back and side to side. Best bet is to buy an oven thermometer and measure each oven. Then you can bake exactly as she does.

I have baked with both and noticed no difference in that respect.  I did notice difference with cooking with gas versus electric in that when you turn off a gas burner, you are done where as when you turn off an electric burner, it stays hot for quite a while and can burn food you think is off the heat.  I think that the quality of ingredients has changed over the years and that is why you are seeing things different.  My own mother used to complain that the recipes she used of HER mothers didn't turn out the same either.  There is a lot of difference using real eggs, real butter, versus margarine or the "healthy" no trans fat spreads and pasteurized eggs.  Taste can be different as well.

  3. The most important thing to keep in mind is cooking temperature.

    If all you have to go on as a reference is low medium and high then guessing is the best you can do since the temperature settings between the two appliances probably vary.

    If you know the preferred temp setting then the use of a portable thermometer will provide you and accurate reading of your appliance.

    You are right about the moisture content in a gas oven, as a substitute to add moisture place a pan or tray of water in the oven.
