are any of willing to share one ur family recipe for kolach and babka. i really love baking breads,cakes and tried lots of them. now i really like to make to some secret family recipe, just for fun and i am honest one even in online.

  1. I don't, but my mom used to make awesome Kolache - unfortunately she is away and won't be able to get me the recipe for you - I hope you find your answer!!

  2. Make a potato bread dough.

    Flatten out in your hand, so that the dough is about 1/2 inch thick and about 3-4" around.

    Spoon in preserves (e.g., apricot or plum), or make a cheese filling, or make a poppy seed or almond filling. I almost always use preserves.

    Then, baste the kolaches with egg yolk using a pastry brush.

    Bake at 325 F for about 20 minutes, until light golden brown. DO NOT OVERBAKE. Cool on cookie sheet. Don't eat too many. :D

    Alternately:

    I got this from a friend from the former Yugoslavia 30 years ago.

    Make a pie crust by cutting flour, baking powder, and salt into shortening or softened butter. Work until the mixture has formed little balls. Then, just enough add orange juice to stick this all together. (same as an ordinary pie crust, just use orange juice where water is normally used). Roll out VERY thin. You should be able to read a newspaper through it. Cut into ~1 inch squares. Put a tiny bit of filling (maybe 1/2 tsp) in the center, and fold up two of the corners, leaving the other corners open. Stick together with a dab of water. Bake at 325 until lightly golden. DO NOT OVERBAKE! Do not overfill or they'll pop open. (Still good to eat).

    Potato bread:

    Peel and boil a potato until soft. Remove from heat and cool. Smash. Add or remove liquid to make somewhere between a pint and a quart. Add 1-2 tbs sugar. Add a package of yeast. Cover and place in warm (~100 degree) place.

    Wait until it starts foaming and is bubbly (45 minutes or so)

    Add flour, small amount of salt. 1/2 cup oil, butter, shortening, or meat drippings. Kneed for about 10 minutes until this dough is thouroughly "activated". Cover and replace in warm place.

    When doubled in size, kneed again, adding more flour if necessary. Replace in warm place.

    When doubled in size, kneed again. Form into loaves, coffee cake, kolaches, etc. Put in warm place and allow to double in size. Bake loaves of bread, top for coffee cake.

    For kolaches, add a spoonfull of the desired filling in center. Turn up the edges to make a little bowl for it. Allow to rise from THERE, then bake at 350 F about 20 minutes. Baste with egg white, and bake about another 5 minutes. Remove to cookie sheet. Decorate by sprinkling with powdered sugar.

    Cheese filling.

    MIx about 1 cup dry curd cottage cheese, 1 cup mild white cheese (e.g., monterey jack, mozzerella). 1/4 tsp nutmeg. 1 egg yolk. 2 tbs powdered sugar. Blend thouroughly.

  3. Kolaches From the Bread Machine --

    INGREDIENTS

    1 1/4 cups warm water

    1/2 cup butter, softened

    1 egg

    1 egg yolk

    1/3 cup milk powder

    1/4 cup instant mashed potato flakes

    1/4 cup white sugar

    1 teaspoon salt

    3 7/8 cups bread flour

    2 teaspoons active dry yeast

    1 (12 ounce) can cherry pie filling

    1 (12 ounce) can poppyseed filling

    1/4 cup butter, melted

    DIRECTIONS

    Place water, softened butter, egg, egg yolk, milk powder, potato flakes, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start. Check dough after 5 minutes of mixing, adding 1 to 2 tablespoons of water if necessary.

    When the cycle is complete, spoon out dough with tablespoon and roll into walnut sized balls. Place 2 inches apart on a lightly greased cookie sheet. Cover and let rise until doubled, about 1 hour.

    Flatten balls slightly with the palm of your and make a depression in center with your thumb. Fill with 1 tablespoon of filling. Cover and let rise for about 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).

    Bake in preheated oven for 13 to 15 minutes, until lightly browned. Remove from oven and brush with melted butter. Cool on wire rack.
