  1. As a hostess, I swept the dining areas briefly at opening (10 minutes), wiped down menus, took out 2 small bags of trash. All while smiling of course.


  2. It depends on the scale of restaurant you're working.

    In fine dining, I've never had to sweep, mop or clean bathrooms (not to say that they aren't required at all.)

    In casual dining, I've had to "touch up" bathrooms during service. Change the TP, wipe down the sinks & stalls, but the major cleaning was left to the bussers or servers.

    I have had to clean & organize the host stand/area.

It depends on where you work on what all you do.  For instance, at Lone Star Steakhouse, the hostesses sweep their area, empty trash only out of bathrooms, clean menus, roll silverware, AND bus tables.... most places have bus boys.  That's something to ask when you're interviewing  - What all will I be responsible for?

  4. From my experience yes...servers take care of their sections and usually have side work as well (in the server alley, drink stations, etc.)...everyone pulls their own weight
