Do knockout roses or double knockouts come in white?

No they do not as of yet. There are red and pink and currently yellow in test gardens over the US.. Yellow should be available to the public in the next few years.  

Heres hoping for the next color to be white. that would be great.

They do not. I haven't even seen where a white knockout is on the release schedule.  You may want to consider the Snowdrift from the Easy Elegance line of roses. Equally or better disease resistance than the Knock Out series and the Snowdrift is also a re-bloomer.
