Do oscar fish shed and how big can the oscar eggs be?

Fish do not shed their skin, if your fish is losing scales it's either through injury or sickness. If they are not losing scales but looking patchy it will probably be a slime coat problem.

As for the eggs, they will be small, round and usually stuck to something flat like a piece of slate. See pictures here:

I know they could get big but about their eggs I don't know.

i once see them shedding at a friends place. He told me that the oscar does this each year.

the eggs get up to 2mm.
