  1. Actually, yes they do.

    The red "waxy" potatoes have lower starch content. Thats why they are waxy, as opposed to the fluffy russet potatoes, which have a fluffy starch.

    The nutritional value isn't that much different though. The difference in the starch content isn't enough to have any real noticable difference in carb levels.


  2. No, but if you are referring to 'Sweet Potato's' well they do have red skins and only about 10% carbohydrate content in comparison.


  3. There's very little different in the carb content between types of potatoes. I do seem to remember reading that the red ones have slightly higher vitamin levels, but that's it.

    And "sweet potatoes" are not potatoes actually.

  4. I know that baby red potatoes are lower on the glycemic index so that's a better choice for dieters.
