Do tissues have extracellular substances between them?

Yes, but the amount depends on the type of tissue.  Muscle tissue does not have a lot of extracellular material, but connective tissue has more extracellular material than it has cells (think blood).  Epithelial tissue is mostly cells, but they attach to each other by extracellular materials.  Nervous tissue has a lot of extracellular material in the form of myelin.
