  1. make a salad. all you need is lettuce tomatoes carrots and a salad dressing of you choice and i think it taste pretty good


  2. PESTO!

    It's basically just fresh basil, parsley, pine seeds or other kind of nutty seeds, garlic, salt and nutritional yeast to give cheesy flavour (try for once instead of parmigiano :) ). Mush all those together in a blender. Do not heat. I can't give exact amounts because it's just made according to taste, so just add a lot of fresh basil and then start adding the rest until the taste pleases you.

    What about MASHED POTATOES WITH GRAVY AND BEANS? While the potatoes are boiling, do the gravy (requires only margarine/oil, white flour, salt/soy sauce, pepper, other spices..). When potatoes are ready just mash them. That's very cheap food and ingredients are almost always at hand, since potatoes are quite hardy so they can be bought in bulk , and everybody got some margarine or oil and some basic white wheat flour. It's also really filling, but not that impressive nutritionally.

    ALL KINDS OF ASIAN WOK

    Just toss in your favourite vegetables and sauté them with noodles. Add asian spices and maybe some coconut milk :) Very easy and fast.

    RICE WITH CURRY AND BEANS

    While the rice is boiling, I often make some sort of curry sauce by spicing up coconut milk. Use plenty of curry, chili and turmeric for example. Add some chickpeas, pepper and/or your favourite vegetables.

  3. Make a grilled sandwich with spinach tomato and cheese.  I( usually cook mine on my electric grill.

  5. www.vegweb.com is a great web site. It is primarily vegan. But it can show that even Vegan can be really tasty. I gaurantee that you will find at least one recipe you  like.

  6. Baba Ganoush is good, healthy and pretty fast (well except for roasting the eggplant, but you can do other things while that is happening). Here is a recipe I nabbed off of the internet.

    Note: Can skip the parsley and pine nuts if you prefer.

       1 1/2 lb Eggplant

           3 tb Lemon juice

           1 ts Salt

           2 ts Minced fresh garlic

           3 tb Sesame tahini

         1/4 c  Chopped parsley

         1/2 c  Toasted pine nuts

           2 tb Olive oil

    Preheat oven to 400 degrees F.  Prick eggplant all over with a fork.  Bake whole until tender (about 30 minutes).  Remove from oven, halve  and scoop out the flesh.  Blend in a food processor with the lemon  juice until smooth.  Mash the salt and garlic together and combine with the eggplant, along with the tahini.  Cool and stir in the parsley and pine nuts. Before serving, drizzle with the olive oil. Serve as a dip with tortilla chips or triangles of flat (pita) bread.

There are lots of good vegetarian cooking websites.  Do a search.  If you register, a lot of them will let you have a recipe book on line, and perhaps also show comments by people who have tried the recipes and rated them.  I like the site Allrecipes, which is not wholly dedicated to vegetarian meals.

    There are hundreds of things,

    like if you got some pita bread and put some olive oil on it you could put tomatoes and pesto and maybe carrots and olives and peppers.  

    Throw some mozzerella on and bake or broil it for 2 minutes.

    Easy.
