  1. Watercress soup is about the only time it is cooked.


  2. You blanche it at most. its eaten raw or added at the very last minute to soups.

  3. You can if you'd like but it really does not taste too good. It better eaten raw

    Tomato, Fennel and Watercress Salad --



    INGREDIENTS

    2 tablespoons white wine vinegar

    4 teaspoons chopped fresh tarragon

    2 teaspoons Dijon-style prepared mustard

    1 teaspoon fennel seed, ground

    5 tablespoons olive oil

    3 cups trimmed and coarsely chopped watercress

    2 bulbs fennel, trimmed and thinly sliced

    6 large tomatoes

    DIRECTIONS

    Whisk together the vinegar, tarragon, mustard, fennel seed and olive oil.

    Cut the tomatoes into 1/2 inch thick wedges. In a large salad bowl, combine the watercress, fennel and tomatoes. Toss with vinaigrette to coat, season with salt and pepper and serve.

    Cantonese Style Pork and Shrimp Dumplings --



    INGREDIENTS

    1/4 pound ground pork

    1 cup chopped watercress

    1/2 (8 ounce) can water chestnuts, drained and chopped

    1/4 cup chopped green onions

    1 tablespoon oyster sauce

    1 1/2 tablespoons sesame oil

    1 teaspoon minced garlic

    1 teaspoon soy sauce

    1/8 teaspoon ground white pepper

    1/8 teaspoon salt

    1 (16 ounce) package round dumpling skins

    1 pound peeled and deveined medium shrimp

    DIRECTIONS

    In a large bowl, combine the pork, watercress, water chestnuts, green onion, oyster sauce, sesame oil, garlic, soy sauce, ground white pepper and salt and mix together well.

    Place 1/2 teaspoonful of this filling onto each dumpling skin. Place 1 shrimp on the filling, slightly wet the edge of the dumpling skin, fold over and pinch with your fingers to form a seal all the way around.

    To cook: Pan fry the dumplings in a large skillet over medium heat with oil for 15 minutes, turning over halfway through OR Place them in a pot of boiling water for 10 minutes; drain and serve in hot chicken broth.

    Winter Fruit Salad --

    INGREDIENTS

    1 1/3 cups quinoa, rinsed

    1 1/2 cups water

    2 kumquats - seeded and chopped

    2 tablespoons chopped fresh cilantro

    1/4 cup olive oil

    2 1/2 tablespoons lemon juice

    1/2 teaspoon kosher salt

    1 Bosc pear - peeled, cored and chopped

    1 cucumber - peeled, seeded and chopped

    1 cup trimmed and coarsely chopped watercress

    DIRECTIONS

    In a medium saucepan, combine the quinoa and water and bring to a boil. Simmer over low heat stirring often, until tender, about 12 minutes. Drain and cool completely.

    In a small bowl, combine the kumquats, cilantro, olive oil, lemon juice and salt. Allow to steep for 5 minutes.

    In a large bowl, combine the quinoa, pear and cucumber. Add the dressing and toss well. Add the watercress and toss again and serve.


  5. Watercress is mostly eaten raw, like a salad green. But there are recipes where it is cooked, or wilted, like watercress soup.

  6. Raw,  rarely is it cooked.  It's great mixed in with other greens for a salad. I believe I have seen it used to make pesto also (like when you sub arugula for basil)
