Kota lemonati means hen with lemon, if it has oregano it would be Kota Riganati,  there are a few versions of it but i will give you the basic and very simple,  you will need a large chicken 4 pound or 2 kilo depending where you live, it has to be large because it has to be brazed in a pot  and if you buy a frier or a small chicken it will brake up real fast and that's something you don't want, so you will need,

    olive oil, and salted butter, 50/50 about half  a cup combined , salt and black pepper, 8 peeled garlic cloves, and the juice of 2 large  lemons, so you wash and dry really well your chicken, rub it with lots of salt and pepper inside and out, then you get your self a pot that has a heavy bottom and its about the same size as the chicken, not too large , then you melt the butter and oil till the butter starts to sizzle but does not burn,  place the chicken in the pot and start brazing all the sides till you get color all over the chook , that's when you add the garlic and a little of the lemon juice  turn down your heat and place the lid on the pot, keep the lid on the pot at all times because you don't want the (steam to escape)  every ten minutes you lift the lid  check the moisture level on the bottom of the pot, if it looks like its drying out then you add more juice on the chicken that way it doesn't dry out, and all the oil, butter, lemon juice and chicken juices start making a lemonato sauce, from time to time you very carefully turn the chicken to a different position so it can cook evenly all over , if you run out of juice just add a little hot water, the same goes if you pot is starting to (catch) burn, at the end you should have a gravy that we love on rice, fries(chips) ,  even pasta,  just so you know a leg of lamb done the same way  is simply unbeaten,  if you are serving wine with this dish try a very dry cold white and enjoy, this is a simple dish that relies on good ingredience  but as good as any thing else  

  3. Lemon flavored chicken (Kota lemonati)

    One 3 to 3 1/2 lb chicken

    1 small onion, grated

    2 Tbsp olive oil

    2 Tbsp fresh lemon juice

    1 tsp salt

    fresh ground pepper

    1/2 tsp oregano

    Remove all visible fat and skin from the chicken, both inside and out and wash well. Pat dry with paper towels.

    Make a marinade with the rest of the ingredients.

    Put the chicken in a roasting pan, pour the marinade all over, cover and refrigerate for 1 hour minimum, preferably longer.

    Bake uncovered at 350 F for 1 to 1 1/2 hours until golden brown. Baste occasionally with the cooking juices. Add water if needed.

    Serves 4.
