Do you have a good recipe for yakitori chicken?

Thanks for your input, all full of interesting tips and advice so far but I was looking for a actual recipe for the marinade (I would like to make it from scratch) that someone personally makes and loves to eat themselves. (Not links to websites - although I do appreciate it is a excellent source of information).

I am a former chef and I just happened to have worked in Japan, and most commonly "Yakitori" is associated with chicken, but it is a variety of broiled items from chicken to pork, eggs (quail) potato's, chicken wing tendons, chicken or duck livers, sausages and some time small fish like sardines, but they are a native to the rivers and small lakes in Japan and are called "Ahu" a smallish trout like fish they use the small "Fry" for this also.

    The sauce while similar to teriyaki is quite a bit more liquid and not as sweet, more a glaze, but flavourful any ways, so they can be alot of things including chicken, yaki means chicken, tori means grilled, but there is so much more, and it is done over live charcoal on a specialize grill.


  2. My understanding is that yakitori is simply chicken pieces on a skewer in teriyaki sauce. However, it usually tastes slightly sweeter than that. I love it and Japanese cuisine in general.

Yes.  First start by soaking your bamboo skewers so that they will not burn during cooking.  (I use 18 ten inch skewers).  Cut about a pound and a half of boneless skinless chicken breast into strips about an inch wide.  Thread your chicken on to your skewers.   To make a glaze, in a large bowl combine 1/2 cup of your favorite teriyaki marinade (we like Aloha brand) with 1/2 cup of pineapple juice and 2 tablespoons of honey, 1 1/2 teaspoons of sesame oil, a clove of pressed garlic and mix well.  Brush your glaze all over your chicken and grill over hot coals.  Turn skewers over and brush with some more glaze.  You will want to cook the chicken until it is no longer pink in the center.  When the chicken is done, sprinkle the chicken with toasted sesame seeds.
