I'm looking for a great pasta salad recipe! Preferably with black olives and no meat!

  1. I do an orzo one, with black olives, cherry tomatoes, asparagus, artichokes, and cilantro, with Italian dressing. I make a big batch and eat it all week.  


  2. Tuna Pasta Salad With Warm Black Olive Vinaigrette

    Ingredients

    12 ounces whole wheat penne

    1/2 cup extra-virgin olive oil

    2 garlic cloves, finely chopped

    1 tablespoon caper, rinsed, drained, and chopped

    1/2 cup kalamata olive, pitted and roughly chopped

    1/2 cup fresh flat-leaf parsley, chopped

    2 tablespoons fresh lemon juice

    1/4 teaspoon black pepper

    2 (6 ounce) cans tuna, drained

    Directions

    1Cook the pasta according to the package directions.

    2Meanwhile, heat 3 T. of the oil in a large skillet over medium-low heat. Add the garlic and cook until softened, about 2 minutes. Add the capers and olives and cook for 3 minutes. Stir in the parsley and cook until wilted, about 1 minute. Remove from heat.

    3Add the lemon juice, pepper, and the remaining oil.

    4Drain the pasta, rinse under cold water, and top with the tuna and olive vinaigrette.

    5Serve immediately .


  3. Spinach Pasta Salad

    1 (12-oz) package bowtie pasta

    2 oz. crumbled feta cheese

    1 (10-oz) package baby spinach leaves

    1 ½ cups black calamata olives, pitted and sliced

    1 tomato, diced

    1 cup Italian salad dressing

    Juice of one lemon

    Salt and pepper to taste

    1. Prepare pasta according to directions on package. Drain.

    2. Transfer pasta to mixing bowl and add feta cheese, baby spinach leaves, black olives, and diced tomato.

    3. In a separate bowl, mix together salad dressing and lemon juice, adding salt and pepper to taste, for the vinaigrette. Pour your vinaigrette over pasta and toss. Refrigerate for four hours. Serve chilled.  

    Servings: 10

    I usually make a homemade vinaigrette for this, rather than using bottled dressing:

    Basic VINAIGRETTE

    1½ tablespoons Dijon mustard

    ¼ cup vinegar of choice

    ¼ cup good olive oil

    3/4 teaspoon kosher salt

    ½ teaspoon freshly ground black pepper

    Whisk together the mustard, vinegar, olive oil, salt, and pepper to make a vinaigrett.

  5. Pasta Salad

    1 lb. preferred pasta (I use trio mix) Boil as directed

    1 rinsed & drained can of kidney beans

    2 stalks chopped celery

    Black olives (as many as you like)

    A little chopped onion or onion powder

    (Can also add shredded carrot if you wish

    I have also added crumbled bacon

    and chopped boiled egg or shredded cheese

    This is a basic recipe, add whatever you like)

    Mix together, mayonnaise, mustard, vinegar and sugar (in a combination that you find pleasing to the palate) and mix all together. Chill.
