  1. A total menu- Salmon, noodles and green beans, enjoy!

    BLACKENED SALMON

    ¾ lb. (3 sticks) unsalted butter, melted in a skillet

    6 fish fillets ½ to ¾ inch thick

    Seasoning mix: ( or by Zatarains or Tony’s creole seasoning mix)

    3 tbsp. sweet paprika

    3 tsp. Salt

    3 tsp. Onion powder

    3 tsp. Garlic powder

    1 tsp. Ground red pepper (preferably cayenne)

    1 tsp. White pepper

    1 tsp. Black pepper

    1 ½ tsp. Dried thyme leaves

    1 ½ tsp. Dried oregano leaves

    Heat a large cast-iron skillet over very high heat until it is beyond the smoking stage and you see white ash in the skillet bottom (the skillet cannot be too hot for this dish), at least 10 minutes.

    Meanwhile, pour 2 tablespoons melted butter in each of 6 small ramekins; set aside and keep warm. Reserve the remaining butter in its skillet. Heat the serving plates in a 250 degrees oven.

    Thoroughly combine the seasoning mix ingredients in a small bowl. Dip each fillet in the reserved melted butter so that both sides are well coated; then sprinkle seasoning mix generously and evenly on both sides of the fillets; patting it in by hand. Place in the hot skillet and pour 1 teaspoon melted butter on top of each fillet (be careful, as the butter may flame up). Cook, uncovered, over the same high heat until the underside looks charred, about 2 minutes (the time will vary according to the fillet's thickness and the heat of the skillet). Turn the fish over and again pour 1 teaspoon butter on top; cook until fish is done, about 2 minutes more. Repeat with remaining fillets. Serve each fillet while piping hot.

    To serve, place one fillet and a ramekin of butter on each heating serving plate.

    Buttered Noodles

    1 package (12 ounces) dried egg noodles

    1/4 cup (4 tablespoons) butter, preferably unsalted

    Salt and pepper to taste

    Chopped fresh parsley for garnish

    Cook the noodles in lightly salted water according to package directions. Drain and return to pot. Heat the butter in a small saucepan over medium-high heat until brown, watching carefully to make sure it doesn't burn. Pour the butter over the noodles. Add salt, pepper and parsley; stir until well-combined. Serve immediately.

    Green Beans Almondine

    1 lb. fresh green beans

    1/2 c. cooking oil

    1/2 tsp. salt

    1 toe garlic, whole

    1 c. sliced almonds

    Wash and slice green beans 1 1/2 inches long. Toast almonds in oven until light brown. Bring 3 quarts of salted water to a boil. Cook uncovered for 5 minutes, then place beans in ice water to shock them, and keep their color bright green. Refrigerate.

    When ready to serve, cover the bottom of a skillet with cooking oil. Add garlic, then green beans and stir fry until heated through. Fold in almonds and serve


  2. I really like this recipe with fillet of fish like red snapper or any kind of white fish steaks.

    In a heavy pan add olive oil ,2 onions sliced,1 garlic clove,and parsley finely cut. Saute for a few min. and deglaze with 1/2 cup good quality red wine.

    Add  crushed tomato's,salt.pepper and the fish and cook for about 10-12 min.

    Your fish should be flaky and the sauce nice and thick when done.

    This is a meal on it's on but if you like some nice white rice it goes very well together.

  3. Broiled Tilapia Parmesan

    INGREDIENTS (Nutrition)

    1/2 cup Parmesan cheese

    1/4 cup butter, softened

    3 tablespoons mayonnaise

    2 tablespoons fresh lemon juice

    1/4 teaspoon dried basil

    1/4 teaspoon ground black pepper

    1/8 teaspoon onion powder

    1/8 teaspoon celery salt

    2 pounds tilapia fillets

    Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.

    In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.

    Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.  

  4. Sure do!  I usually cook Tilapia, as it's a pretty mild fish and comes out great.  Here's what you'll need.

    Tilapia fillets (however many you need)

    Butter or olive oil

    McCormick Roasted Garlic and Herb seasoning

    2 Lemons (Optional)

    Basil or dill (also optional.)

    Take a frying pan and put it on medium to 3/4 heat. (Medium cooks slower, but will leave the fish more moist.)  Season the pan with either the butter or the olive oil.  The butter gives a better flavor, but the olive oil is better for you.  Let the pan warm up and then put the fillets on.  While the bottom side is cooking, season the top side with the Roasted Garlic seasoning.  Let cook for about 1-2 minutes and then flip over.  (The more you flip it, the better it comes out.)  Season the other side with the garlic seasoning and let cook for 1-2 minutes.  Flip the fillets back over.

    Next, cut a lemon in half.  Using a fork, squeeze the juice onto the fillets, being careful not to use too much. Just experiment to see what you prefer on the lemon juice.  Once you've added juice, let the fillets cook for about another minute and then remove them from the pan.  You might need to adjust the cook times a little, depending on your stove.  Put these on a plate and add a little basil on top for a nice touch.

    These taste great and are simple and quick to make and go really well on a bed of rice.  Hope you like!

  6. piece of fish, dash of lemon juice, garlic, a pinch of mixed herbs and a little dab of butter. straight into a pan, mmmmmmmmmmm simplest and easiest and most delicious.... our family loves it. u can also pop it under the grill (broiler i think in american english)
