  1. Green Rice

    1 3/4 cups chicken broth or water

    2 roasted poblano peppers, stems, seeds and skin removed

    1 roasted jalapeno pepper, stem, seeds and skin removed

    1/2 cup chopped fresh cilantro leaves, divided

    Kosher salt

    2 tablespoons vegetable oil

    1 Spanish onion, finely diced

    4 garlic cloves, peeled and finely chopped

    1 1/4 cups long-grain rice

    Combine the broth and chiles in a medium saucepan, bring to a boil, and then partially cover and simmer gently over medium to medium-low heat for about 10 minutes. Pour the chile mixture into a food processor, add 1/4 cup cilantro and process to a smooth puree. Season with salt and keep warm.

    Wipe the pan clean, add the oil, and heat over medium-high heat. Add the onions and cook until soft. Add the garlic and cook for 1 minute. Stir in the rice and cook for 1 minute. Add the warm broth mixture, stir, and season with salt. Bring to a boil, cover, and then reduce the heat to medium-low and cook for 15 minutes. Remove from the heat and let sit for 5 minutes, covered. Fluff with a fork, transfer to a bowl, and stir in remaining cilantro.


  2. Ceviche is easy but takes time after you're done with it, so I make it the night before. The basics are fish or shrimp, lime juice (lots of it so it covers everything), onions, cilantro, garlic, and jalopeno. You can also add other peppers. Cut everything into the size of pieces you'd want in salsa, mix it all together, and stick it in the fridge for 4 or more hours. The fridge time is important because you DO NOT cook the fish. The lime juice makes it perfectly safe to eat. Serve it on chips or tostadas. It's amazing and not stereotypical at all. Google it if you want other ideas of what to add.

  3. well a super easy one is just get a can of homony and add some tabasco and cook till its soft....

    or just a can or two of refried beans just cook it with some salsa and then serve it with cheese...

  4. Can't go wrong with refried beans with cheese and some spanish rice, they go great with with any mexican dish.

  5. guacamole is always good. avacado ,onion, tomato, cilantro, mayo, and jalepenos if you want. slice open the avacado and take the ball out put the avacado in a bowl and squish it. add the mayo but not much and some salt. mix it good and add the other stuff cut up into it. the mayo makes it creamy and also makes it not go bad as fast. but dont make it until your ready to serve it.some people instead of mayo put lime.

  6. My uncle gave me this one from his restaurant in texas (more texmex but goooooood)....

    prepare 8 servings of texmati rice

    lightly fry up a can of diced green chilis in 1 stick of salted butter

    mix butter and green chilis thorough rice, salt to taste
