  1. Aunt Carmella's Saturday Special

    Ingredients:

    1 pound of De An's sweet sausage (cut the links

              into bite size chunks)

    1/2 cup diced green pepper

    1/2 cup diced red bell pepper

    1/2 cup yellow bell pepper

    2 green onions (scallions) chopped

    2 minced garlic cloves

    3 diced large red (new) potatoes, boiled

    1 16 oz can diced tomatoes

    1/4 cup of  olive oil (add more if needed)                

    Cooking Instructions:

    Brown sausage and garlic in olive oil. Add diced potatoes, peppers and onions. Fry together for about 5 minutes over a medium heat. Add diced tomatoes. Cover and cook another 15 minutes over a low to medium flame. Enjoy!


  2. 6-8 Italian sausage links, sliced

    1 large can Hunts sauce

    1 large green bell pepper

    1 large onion, sliced

    1/4 tsp garlic powder

    1 tsp fresh or 1/2 tsp dried basil

    1/2 tsp fresh or 1/4 tsp dried oregano

    2-3 T olive oil

    3-5 cloves garlic, whole

    1/4 cayenne or jalapeno pepper, minced

    1 bay leaf

    1 small can mushrooms

    1 T balsamic vinegar

    Slice the sausage into 1 1/2 inch thick slices. Core and slice the pepper, and slice the onion lengthwise, 1/2 inch thick. Finely mince the hot pepper; you may substitute dried red pepper flakes or cayenne powder. Adjust amount according to heat desired.

    Brown the sliced sausage in the olive oil. When the sausage is half done, add the whole cloves of garlic and allow to brown in oil, but if garlic browns too rapidly, remove to a cooler side of the pan. Crush the garlic cloves into the oil with the tines of a fork when they brown. Add the peppers, onions and cook until edges of onions begin to brown.

    Deglaze the pan with the balsamic vinegar. Reduce heat and add the sauce, bay leaf, and remaining ingredients. Simmer over very low heat for 30 minutes. Last 5 minutes, stir in the can of mushrooms. Adjust seasonings, adding salt and pepper to taste.

    Remove bay leaf and serve with portuguese pops, bulkie rolls, hoagie buns or any hearty roll with a substantial crust.

    For a special occasion, layer on a bit of Parmesan or mozzarella cheese and place under the broiler 2-3 minutes before serving.

  3. 2 pounds hot sausage

    2 pounds sweet sausage

    1/2 cup olive oil

    8 red onions, cut julienne

    6 garlic cloves, chopped

    4 red bell peppers, cut julienne

    4 green bell peppers, cut julienne

    1/2 bunch basil leaves, chopped

    1 bunch scallions, chopped

    Place sausage on a hot grill and cook until done. This may take about 45 minutes.

    Heat oil in a saute pan placed on grill. Add red onions, garlic, red bell peppers, and green bell peppers and cook until translucent. Add basil and scallions and cook for a few minutes. Once cooked, cut sausage into 2-inch long pieces, and arrange on serving platter with pepper and onion mixture. Serve with crusty bread or rolls.

  4. Broccoli Rabe with chicken sausage.  Buy quality sausage at a salumeria, saute until done, blanche rabe, drain, saute with olive oil, garlic, in same pan you sauteed sausage.  Plate with sausage on rabe.  Serve with crusty semolina bread.

    special seasonings

    and i add spices and vinegar as i case them

    tie off with string and cook

    Best Ever Sausage with Peppers, Onions, and Beer!

    Yields: 6 servings

    INGREDIENTS:

    3 tablespoons olive oil

    3 pounds Italian sausage links

    3 red bell peppers, sliced

    2 green bell peppers, sliced

    2 large red onions, sliced

    3 cloves garlic, chopped

    2 (12 fluid ounce) bottles beer 1 (6 ounce) can tomato paste

    3 tablespoons chopped fresh

    oregano

    3 tablespoons chopped fresh

    cilantro

    2 tablespoons hot sauce

    salt and pepper to taste

    DIRECTIONS:

    1. Heat olive oil in a large heavy skillet over medium high heat. Cook sausage until browned on all sides. Remove sausage from pan, and set aside. Pour in 1 bottle of beer to deglaze the pan, scraping up any blackened bits from the bottom. Place the red peppers, green peppers, onions and garlic in the pan. Stir in the remaining beer and the tomato paste. Season with oregano, cilantro, hot sauce, salt and pepper. Cover, and simmer until onions and peppers are tender. Slice the sausages into bite size pieces, and add to the peppers. Cover, and simmer until sausage is cooked through.

  8. Sausage and Peppers with Onions

    Preheat the oven to 350 degrees

    Take the Sausages out of the package (you can use any brand, as many as you want)

    Line them up in a baking pan and put in the oven for a half hour, halfway through, turn them over.  Make sure you use a baking pan that has sides, you're going to add the onions and peppers after.

    In the meantime,  cut up your red and green bell peppers and onions, and mince the  garlic.  How much you use, depends on how much you're making.

    (If I make a pack of 12 sweet sausages, I use one red pepper, and one green pepper, and 2 onions.  For garlic, I use about 4 cloves, minced. If I'm making more, I use more) You can use the Italian sweet or hot or both.  My family just likes the sweet.  For the 12 sausages, that feeds 4 of us.

    When the half hour is up, take the sausages out, cut each link into 5-6 pieces, I make them into small disks, and then add all the peppers, onions, and garlic.

    Sprinkle with salt, pepper, garlic powder, and olive oil  and toss together.

    Cover with aluminium foil and put back into the oven for one hour.

    Halfway through at the half hour mark, mix everything together just to stir it.  

    When there's about 10 minutes or so left, take the foil off and let it cook without it.

    When done, drain the grease, taste, and see if you need to add more salt, pepper, and garlic powder if so, add it and then stir.

    Serve and enjoy!!
