I tailgate every year...we are looking for some new recipes, something that doesn't necessarily have to stay cold in case it is hot outside and vice versa!! thanks

  1. Grilled Potato & Avocado Salad

    Ingredients

    1-1/2 lbs. all-purpose potatoes, cut into 1/2-inch chunks

    2 medium red bell peppers, cut into 1/2-inch pieces

    1/4 cup Hellmann's® or Best Foods® Real Mayonnaise

    1 medium avocado, diced

    2 Tbsp. chopped fresh cilantro

    1 medium red onion, cut into 1/2-inch pieces

    1/2 cup Lawry's® Italian Garlic Steak Marinade With Roasted Garlic & Olive Oil

    1 tsp. Lawry's® Seasoned Salt

    1 tsp. Lawry's® Seasoned Pepper

    Preparation

    1. In large bowl, toss potatoes, vegetables, Lawry's® Italian Garlic Steak Marinade With Roasted Garlic & Olive Oil, Seasoned Salt and Seasoned Pepper. In center of double layer (18 x 24-inch pieces) heavy-duty aluminum foil, arrange potato mixture. Wrap foil loosely around potatoes and vegetables, sealing airtight with double fold. Grill, turning occasionally, 45 minutes or until potatoes are tender; cool slightly.

    2. In large bowl, toss potato mixture with Mayonnaise, then gently stir in avocado and cilantro. Serve warm or at room temperature.

    Serves: 6

    Cook Time: 35 Minutes

    Grilled Pizza

    4 Servings

    3/4 pound Ground beef

    1 Medium onion; chopped

    8 oz Refrigerated crescent rolls

    8 oz Pizza sauce

    Toppings of your choice (mushroom, sliced and pitted ripe olives, green bell pepper, etc.)

    Mozzarella cheese

    Brown ground beef and onion in well-seasoned 11 to 12-inch cast iron skillet over medium coals. Remove browned beef to paper towels to drain. Pour off drippings from pan. Separate crescent dough into triangles; place in skillet, points toward center, to form circle. Press edges together to form bottom crust about 1 inch up the side of pan. Spread on half of pizza sauce. Spoon ground beef mixture over sauce. Cover with toppings. Pour remaining sauce over all; sprinkle with cheese. Place pan in center of grill over medium coals. Place cover on skillet and cook 20 to 30 minutes or until crust is lightly browned. (If cooked over open grill or coals, cover pan securely with foil.)

    Goof Cake

    1 box yellow cake mix

    1 egg

    1 stick butter or margarine

    Topping:

    1 box confectioners sugar

    1 (8 oz.) cream cheese

    2 eggs

    1 tsp. vanilla

    Combine cake mix, egg and margarine. Pat into 9 x 13-inch pan. (It is very stiff to work with.) Combine topping ingredients and pour over cake mixture. Bake at 350 degrees for 40 minutes. Cool and store in airtight container.

    Cold Spaghetti Salad

    1 lb (16oz.) Box of Spagetti No.8

    1 Bottle of McCormicks Salad Supreme Seasoning

    1 Red (or green) Pepper, diced

    1 or 2 Medium size Tomatoes, diced

    1 Bottle of Italian dressing (your choice)

    Cook spagetti as directed. Drain. Run cold water over the spagetti to cool. Add all remaining ingredients. Mix well. Cover and chill overnight.

    Variation: Use a jar of Roasted Red Peppers in place of the fresh Red Pepper.

    Very easy to make and it's very good at room temperature. Plus there is no need to worry about it "spoiling" in the heat. There is no dairy. ENJOY!!!
