Question:

Do you have any vegan pasta and vegetable soup ideas?

I have 2 boxes of elbow macaroni and a container of vegetable stock. I am going to the farmers market tomorrow, so I was wondering what kind of vegetables I should get. I am already getting carrots and corn, so any other suggestions would be great. I won't be adding any extra herbs though because the stock is already seasoned.

  1. Hey This Is A Recipe I Found Really Hope It Helps!

    Large k**b of butter

    1 tbsp olive oil

    1 large onion, chopped

    2 large carrots, chopped

    3 stems celery, chopped

    Salt and freshly ground pepper

    500g floury potatoes, such as maris piper, peeled and cubed

    1 bouquet garni

    750ml hot water

    6 tbsp single cream, or to taste

    Pesto or harissa, to finish


  2. Zucchini, tomatoes and okra.  (Okra if you like it, otherwise, leave it out.)  

    Saute onion, celery and garlic in a little vegetable oil until they are soft.  Add the carrots and cook about five more minutes.  Add your stock and the corn and okra and cook until the carrots are tender.  Then add the tomatoes, chopped, and the zucchini, sliced to about 1/4 inch.  When the tomatoes are a tad tender you will have a great soup.  Add macaroni that has been cooked separately in the last few minutes.

    If they have some fresh herbs I would definitely add some fresh basil. You will have a fabulous minestrone. And don't forget the salt and pepper!

  3. I love adding red or green bell peppers, spinach, and minced garlic to my pasta dishes.  They would work well in soups too.
