Do you have to use a broiler pan in a broiler or can you use a cassorole dish or cake pan?

I can't find my broiler pan so I was wondering if I could use a cassorole dish or cake pan. I'm making Korean BBQ (i can't grill because it's the middle of winter).

  1. Depending on where you grill is, many people grill in the winter.  Mind is covered outside my back door... and I use it.  But if you can't, and for ribs, or any meat that might be greasy, don't use a cake pan. You can get a broiler pan pretty inexpensively.  Go out and get one.


  2. Consider why you use a broiler pan. The slots allow the fat to run down so the meat doesn't sit in it. On a grill the same thing happens but the fat hits the fire and results in smoke and flaming that enhance the flavor of the meat.. In a pinch I have used pieces of foil that I roll and twist into long strips and lay in a pan. this keeps the meat off the bottom of the pan. The trick is to make sure the meat is higher than the sides of the pan. On a broiler pan the meat is the highest thing under the broiler. A cookie sheet with small / short sides works best.

  3. You can use a cake pan.  It just won't drain the fat.  I wouldn't use a glass dish on open flame though.
