Do you know a good recipe for healthier cheese potatoes?

  1. Ingredients:

    2/3 cup butter

    2/3 cup flour

    7 cups milk

    4 large baking potatoes, baked, cooled, peeled and cubed, about 4 cups

    4 green onions, thinly sliced

    10 to 12 strips bacon, cooked, drained, and crumbled

    1 1/4 cups shredded mild cheddar cheese

    1 cup (8 ounces) sour cream

    3/4 teaspoon salt

    1/2 teaspoon pepper

    Preparation:

    In a large Dutch oven or stockpot over low heat, melt butter. Stir in flour; stir until smooth and bubbly. Gradually add milk, stirring constantly, until sauce has thickened. Add potatoes and onions. Continue to cook, stirring constantly, until soup begins to bubble. Reduce heat; simmer gently for 10 minutes. Add remaining ingredients; stir until cheese is melted. Serve baked potato soup immediately.


  2. i dont think there is one, well there probably is but its not much healthier, i mean potatoes are high in carbs and well cheese is you know. :)

    but taking all the fat away from cheese potatoes would just change the taste, so i think you should just stick with the recipe just dont eat it everyday.

    another potato recipe would be using the Kraft's zesty italian dressing with potatoes, just pour some in and bake with parmesan cheese and some mozzerella and rosemary...mmm :)

  3. Potatoes are healthy for you. A plain baked potato has an abundance of nutrients in it.

    So - to make a cheesy but relatively healthy potato for one or two:

    Bake an Idaho potato for an hour or so until a fork pierces it easily. Let it cool slightly, then slice it in half length-wise. With a spoon, scoop out the potato flesh leaving about a 1/4 inch shell. With a fork, mash the scooped out potato in a bowl with one tablespoon of low fat or non-fat yogurt and a little salt and pepper or garlic/onion powder if you like. Add 1 tablespoon low-fat or non-fat ricotta cheese and 1 tablespoon shredded parmesan cheese. Mash it until creamy. Pile it back in the potato shells, top with either a little more parmesan, place on a pie plate and return to oven for about 10 minutes, until cheeses have melted. It's great and cheesy, and healthy. Enjoy!
