Do you know any estonian recipe?

My vana ema used to do some, but she is gone and I hadn't the idea to register the dishes she did. I am interested in raw sardines conserved in vinegar and pepper, in a soup made of flour chunks and in a cream made of grapes. Do you know these?

  1. here is a recipe for estonian 'rossolye' (herring with beets) in vinagraitte

    serves 6-8

    salad ingredients

    2 chopped hard-boiled eggs

    3- 4 small boiled and peeled fresh/canned beets dice into 1/4-inch pieces

    1 lb (about 3 medium) boiled potatoes, peeled and cut as per beets

    dressing

    3 tsp powdered mustard

    1 1/4 tsp sugar

    2 tbsp warm water

    1 cup sour cream

    Method :

    2 sour dill pickles, cut lengthwise into narrow strips, then crosswise into 1/4-inch-wide bits 3 fillet of pickled herring, drained and cut into 1/4 inch dice.

    4 pound of boiled beef, or cooked ham, veal or lamb, trimmed of fat and cut into 1/2-inch dice.

    5 large, tart red apple, cored, peeled and cut into 1/4 inch dice 3 hard-cooked eggs, cut into quarters

    In a small bowl, combine the dry mustard with 1/4 teaspoon of sugar and stir in 1 to 2 tablespoons of warm water, or enough to make a thick paste.

    stand for 15 minutes. Then stir in the sour cream and the remaining teaspoon of sugar. In a large mixing bowl, combine the finely chopped eggs, diced beets, potatoes, herring, meat and apple. Add sour cream dressing and toss together lightly but thoroughly until all ingredients are coated with dressing.

    here is an estonian soup recipe (i dont know if its the same one though)

    banana curry soup

    1 tbsp butter

    1 onion chopped fine

    1/2 tsp curry powder

    6 cups chicken stock

    3  ripe bananas - peeled and chopped

    2 tbsp lemon juice

        Salt to taste

    garnish

    1/2 cup heavy cream , sliced scallions

    serves 4-6

    Method :

    Melt the butter in a saucepan stir in the onion and saute for 5 minutes.

    Stir in the curry powder and saute for a few seconds.

    Pour in the stock, bananas, lemon juice, and salt. Bring to a boil, cover, and simmer for 15 minutes.

    Puree in a blender, solids first, then pour in the cream and blend. Taste for seasoning. Pour into bowls, add cream,  

    optional -place sliced scallions as garnish.
