I am a former chef and have worked in Montreal and visited Quebec City, there are a number of places that do a traditional menu, ragout du boulettes is a pork hock amd meatball stew and is quite tastey, as for duck you may find it in many fashions roasted with sauces, only the breast in different methods.

As for the exact places, you would have to access the local restaurant review pages, and most will be french.
