Question:

Do you know any recipes using Agave nectar syrup?

I am on an anti candida diet, I have discovered agave nectar, some people say its fine on anti candida diet, others disagree but i'm willing to give it a go. I cant seem to find any free recipes using this stuff though, do you have any? I am also not eating any refined carbohydrates which basically means anything white so any wholemeal recipes using agave nectar would be even better! Thanks

  1. I've made cinnamon swirl muffins with agave nectar several times.  (See recipe in the link below).  It has 1 cup unbleached flour and 1 cup whole wheat, but you can probably substitute whole wheat for the unbleached if I understand your question right.  The muffins are super moist, almost too moist, so you might want to cut out a little of the liquids (but not too much because the second time I made them they were too dry).

    I fed some of these to my non-veg coworkers before telling them they were vegan and they liked them.

    And as already mentioned, agave nectar is a good substitute in any recipe that usually calls for honey.

  3. Agave Lime pie

    2 tablespoons cornstarch

    1 1/2 cups water

    1 tablespoon unsalted butter

    2 eggs, well beaten in a small bowl

    1 cup strained fresh lime juice

    1 tablespoon finely grated lime rind

    2/3 cup agave nectar

    1 teaspoon agar agar

    9-inch prepared pie shell (graham cracker crust preferred)

    whipped cream and thin-sliced limes

    Mix cornstarch to a paste with a little of the water. Add the rest of the water and place in a medium saucepan. Over low heat, cook, stirring constantly with a wooden spoon, until thickened. Stir in the butter. Remove from heat and stir in the lime juice and zest. Temper eggs by whisking in a small amount of lime mixture into eggs, then add all eggs back into lime mixture. Cook, stirring constantly, over very low heat about 5 minutes or until mixture has thickened. Remove from heat, stir in agave nectar and dissolved gelatin until well combined. Let cool slightly. Pour into pie shell and chill overnight until firm. Garnish with whipped cream and lime slices.
