Do you know anything about guacamole?

I made some guacamole the day after I bought avocados (I stored them in the fridge in the meantime). We ate some, and then put it in the fridge. The next day, I took it out, and the top layer was a dark green color, almost black. It also smelled bad. Did I do something wrong, or were the avocados bad?

  1. cut avocado discolors where it hits the air.

    Next time, put Lemon juice into the mixture and cover tightly with plastic wrap. The less contact with air, the better.

    I cannot explain the bad smell. It should have smelled fine unless you left it out at room temperature a long time.


  2. if you didnt cover it it gets really nasty. its like cutting apples and leaving them out or in the fridge uncovered, they turn brown. whenever i make guacamole i cover it with GLAD Press 'n Seal. it works great. hope i helped! (:

  3. That's normal.  Avocados only last for a few hours after you cut them open.

  6. Use lemon and also, after you make it, stick the avocado seeds back in there. I don't know why but it keeps the guac fresh longer.  

  7. you did not do nothing wrong but avocados will turn black next day they are so HARD to use and keep from turning color try using lemon next time

  8. Avocados discolor almost immediately if an acid is not introduced. Just a few drops of lemon juice or lime juice will preserve the color and give it a bright taste.

  9. guac dip does not last long, you have to add lemon juice to keep it from turning brown and staying fresh.  If I have extra I usually freeze it until I use it again.
